Frequently asked questions

Absolutely. Here is an example for the treacle.

Planteray Xaymaca – 60ml
Sugar Syrup – 2:1 10ml
Granny Smith pressed apple juice – 30ml
Angostura Bitters – 2 dashes

Stir Rum, sugar syrup and bitters in a freezing cold mixing glass with cubed ice and strain over block ice into a cold double old fashioned glass. Float apple juice and garnish with an orange twist.

Minor alterations and specificity in preparation is key!

We will allow the use of Rhum Agricole but it must not be the dominant rum in your spec. Think 10 ml in a Mojito, even 20ml in a Mai Tai against 30 ml of Plantation Xaymaca for instance.
As specific as you want. If you want to shake for 12.75 seconds and not 12.25 then we will. Mixture of cubed and crushed ice, specific garnish to elevate the whole drink, whatever it is we will do our best to facilitate this!
12 judges over 4 rounds. Most, if not all have been recognised in individual awards and competitions, have been bartending for most of their adult life and I would confidently order any one of these classics from them. A number of them also come with significant expertise in the rum and rum cocktail category. Judges will be announced on IG with a small bio so keep a look out.
In short: We’re looking for the best drink. The judges, as mentioned, have not only experience, but mountains of knowledge and great palates. Beforehand, the judges will be asked what they are looking for in the relevant classic. We’ll discuss what we don’t want to see, what’s perhaps taboo (Bitters in a Mai Tai?!) and what we do want to see. The recipe cannot stray so far from its original. It must be recognisable as the classic it is intending to perfect.
